Cheese Base

  • Warm Water (60 degree Celsius) 100 ml

Cheese Gremolata Dressing

  • Extra Virgin Olive Oil 50 ml
  • Lemon Juice 5 ml
  • White Wine Vinegar 5 ml
  • Parsley, chopped 5 g
  • Lemon Zest 1 g
  • Basil, chopped 2 g
  • Walnut, toasted and chopped 50 g

Garnish and Condiments

  • Fresh Ice Salad, washed 100 g
  • Fresh Arugula, washed 20 g
  • Fresh Frisee Salad, washed 20 g
  • Purple Radish 5 g
  • Smoked Duck, sliced 100 g
  • Olives, wedges 10 g
  • Cherry Tomatoes 20 g
  • Grapefruit, segments 20 g
  • Purple Edible Flower, washed 5 g
  1. Cheese Base

    • Mix all the ingredients together.
    • Set aside.
  2. Cheese Gremolata Dressing

    • Mix all the ingredients together (including 100ml of cheese base).
  3. Garnish and Condiments

    • Prepare ingredients as mentioned above.
  4. Before Serving

    • Plate and assemble.
    • Garnish and serve.
