Sweet Mint Dip

  • Thai Chilli Sauce 200 ml
  • Soya Sauce 40 ml
  • Black Vinegar 20 ml
  • Mint Leaf, chopped 20 g

Ginseng & Dang Gui Dip

  • Ginseng Powder 2 g
  • Dang Gui Powder 2 g
  • Rice Wine Vinegar 20 ml
  • Sesame Oil 10 ml
  • Water 40 ml

Ginger & Spring Onion Dip

  • Corn Oil 100 ml
  • Young Ginger, peeled 200 g
  • Spring Onion, sliced 100 g

Garnish and Condiment

  • Poached White Chicken, chopped 800 g
  1. Sweet Mint Dip

    • In a mixing bowl, mix well all the ingredients. Ready to use.
  2. Ginseng & Dang Gui Dip

    • In a sauce pot, whisk in all ingredients and bring to boil. Ready to use.
  3. Ginger & Spring Onion Dip

    • Using a jug blender, roughly blend ginger and spring onion.
    • In a mixing bowl, mix well all the ingredients.
    • Heat up oil till smoking point, fold oil onto spring onion ginger paste and mix well.
  4. Garnish and Condiment

    • Prepare ingredients as mentioned above.
  5. Before Serving

    • Plate and assemble.
    • Portion dipping sauce into desired ramekins.
    • Ready to serve.
