  • Hamachi, sashimi grade 100.0 g
  • Cucumber, shredded 20.0 g
  • Kaiso Salad 5.0 g

Garnish

  • Coriander Cress 4.0 g
  • Kogiku Flower 2.0 g
  • Red Shiso 2.0 g

Preparation

  1. Tiger Milk

    • In a mixing bowl, mix well all ingredients and set aside
  2. Build

    • Wrap Cucumber Slaw with sliced Hamachi and set aside
    • Pour Tiger Milk base onto serving wear and place fish onto the center of the ware
    • Garnish with kaiso salad
  3. Garnish

    • Garnish before serving
