Grilled Squid

  • Squid, washed 500.0 g
  • Sea Salt 5.0 g
  • Black Pepper 4.0 g

Roasted Bell Peppers

Smoked Chilli and Watermelon Vinaigrette

Condiments

  • Rosemary 2.0 g
  • Coriander Cress 5.0 g
  • Watermelon, compressed 400.0 g

Preparation

  1. Grilled Squid

    • Char the squid in the griller and season with salt and pepper.
    • Set aside.      
  2. Roasted Bell Peppers

    • Preheat oven to 200°C.
    • Mix all the ingredients in a mixing bowl.
    • Lay capsicums on an aluminum foil and wrap it tightly. Bake for 8 mins or till capsicums turn soft and tender.  
  3. Smoked Chilli and Watermelon Vinaigrette

    • Mix well ingredients expect olive oil in a mixing bowl.
    • Once mixture is well mixed, slowly whisk in olive oil.
    • Set aside.      
  4. Condiments

    • Prepare condiments as mentioned.
  5. Plating and Assembly

    • Plate and garnish with rosemary and coriander cress.
