  • Black Pepper 4.0 g

Smoked Chilli and Watermelon Vinaigrette


  • Rosemary 2.0 g
  • Coriander Cress 5.0 g
  • Watermelon, compressed 400.0 g

This grilled squid recipe is filled with an assortment of textures and flavours. The smoked chilli and watermelon vinaigrette smokes and refreshes the salad, while the roasted bell peppers and condiments enhances the flavour, while the compressed watermelon provides a contast to the dish.



  1. Grilled Squid

    • Char the squid in the griller and season with salt and pepper.
    • Set aside.      
  2. Roasted Bell Peppers

    • Preheat oven to 200°C.
    • Mix all the ingredients in a mixing bowl.
    • Lay capsicums on an aluminum foil and wrap it tightly. Bake for 8 mins or till capsicums turn soft and tender.  
  3. Smoked Chilli and Watermelon Vinaigrette

    • Mix well ingredients expect olive oil in a mixing bowl.
    • Once mixture is well mixed, slowly whisk in olive oil.
    • Set aside.      
  4. Condiments

    • Prepare condiments as mentioned.
  5. Plating and Assembly

    • Plate and garnish with rosemary and coriander cress.
