A bold reinterpretation of a Southeast Asian classic. This recipe takes the iconic flavors of laksa and refines them into a rich, tomato-based pasta sauce. Fragrant laksa leaves, dried prawn paste, and chili are blended into a deep, savory paste, then simmered with tomato and coconut milk for a creamy, spicy finish. Preparation

  1. Laksa Paste

    • Blend shallot, garlic, laksa leaves with oil in a blender into a fine paste.
    • Transfer the paste to a wide-surface pot and sweat until most of the moisture evaporates.
    • Add dried chilies, fresh red chilies, dried prawn paste, blue ginger, and turmeric paste, then continue sweating until oil begins to separate.
    • Add salt and sugar, cook until the paste turns dark red, then add water.
    • Bring to a boil, and in Knorr Professional Ikan Bilis Seasoning Powder, Knorr Professional Pronto Tomato, simmer for 2 minutes and remove from heat. Let it cool down.
  2. Build

    • Pre-heat pan, sweet garlic with oil till almost brown. Add in water and laksa paste, Once boil.
    • Add cooked pasta to the sauce and stir-fry until the sauce thickens and coat well to the pasta.
    • Plate the pasta, garnish and ready to serve
