Garnish

  • Spring Onions, curls 4.0 g
  • Coriander Cress 5.0 g

Preparation

  1. Fried Calamari

    • In a mixing bowl, mix well all the ingredients and marinate overnight. 
    • Deep fry marinated baby calamari at 180°C till for 3 mins, or till golden brown. Make sure the calamari is cooked.  
  2. Fermented Smoked Chilli Sauce

    • Mix well all ingredients in a mixing bowl.
  3. Garnish

    • Prepare garnish as mentioned.
    • Plate and assemble.
