  • Lady Finger, sliced 100.0 g

  • Oyster Mushrooms, striped 100.0 g
  • Eggplant, striped 200.0 g

Salted Egg Sauce

  • Margarine 100.0 g
  • Curry Leaf 4.0 g
  • Chilli Padi 2.0 g
  • Knorr Golden Salted Egg Powder 800g 60.0 g
  • Sugar 20.0 g
  • Knorr Chicken Seasoning Powder 1kg 6.0 g

Before Serving

  • Curry Leaves, fried 2.0 g
  • Chilli Padi, fried 4.0 g

Preparation

  1. Crispy Batter Mix

    • In a mixing bowl mix all ingredients together.
    • Set aside.
  2. Crispy Vegetables

    • Prepared the vegetables as mention above.
    • Preheat deep fryer to 190 degree Celsius.
    • Lightly toss vegetables with corn flour and coat it with batter mix.
    • Deep fried vegetables to golden brown and set aside.
  3. Salted Egg Sauce

    • In a pan, melt margarine, stir fried curry leafs and chilli padi till fragrant.
    • Add in seasoning and toss in the fried vegetables
  4. Before Serving

    • Plate the crispy vegetables, garnish with fried curry leaf and fried chilli padi.
    • Ready to serve.
