Fruity Tamarind Dressing

Lobster

  • Maine Lobster, blanched and portioned 400 g

Pickled Solution

Pickled Vegetables

  • Yellow Zucchini, stripped 50 g
  • Green Zucchini, stripped 50 g
  • Carrot, stripped 50 g
  • Daikon, stripped 50 g
  • Cucumber, stripped 50 g

Garnish and Condiments

  • Walnut 50 g
  • Red Veined Sorrel 5 g
  • Fruity Tamarind Dressing 100 ml
  1. Fruity Tamarind Dressing

    • In a mixing bowl, mix well all ingredients.

  2. Lobster

    • Prepare ingredients as mentioned above.
  3. Pickled Solution

    • In a pot, add in all ingredients and bring to boil.
    • Set aside and cool down.
  4. Pickled Vegetables

    • In a mixing bowl, put all the vegetables and pour in pickle solution.
    • Let it soak for at least 2hours.
  5. Garnish and Condiments

    • Prepare ingredients as mentioned above.
  6. Before Serving

    • In a mixing bowl dress salad.
    • Plate and serve.
