Preparation

  1. Sour Cherries

    • In a pot, bring sugar and vinegar to boil. Mix well and fold in ice.
    • Soak cherries in brine for at least 2 hours. 
  2. Sour Cherries Sauce

    • In a pot, caramelize shallots with sugar and butter. Deglaze with red wine and port wine. Reduce till half.
    • In a mixing bowl, mix well water and Knorr Professional Demi Glace Brown Sauce Mix. Bring to a boil and let it simmer for 5 mins.
    • Fold in sour cherries and let it simmer for another 5 mins.
