Sweet Tamarind Sauce

Tiger Prawn

  • Tiger Prawn, 16-20, de-veined and trimmed 800.0 g
  • Young Ginger, peeled and sliced 10.0 g
  • Garlic, peeled and sliced 20.0 g
  • Spring Onion, stripped 40.0 g
  • Sweet Tamarind Sauce, as above 240.0 ml

Garnish and Condiment

  • Affilla Cress, washed 5.0 g
  • Fried Sliced Garlic 5.0 g
  1. Sweet Tamarind Sauce

    • In a sauce pot, mix well all the ingredients and bring to boil. Set aside.
  2. Tiger Prawn

    • Using a wok, heat up oil, deep fry tiger prawn with high heat till crispy and golden brown. Set aside.
    • Season wok with oil, stir fry ginger and garlic till fragrant.
    • Fold in sweet tamarind sauce, prawns and toss evenly with high heat.
  3. Garnish and Condiment

    • Prepare ingredients as mentioned above.
  4. Before Serving

    • Plate, garnish and ready to serve.
