Deep Fried Crispy Scallop with Golden Superior Sauce

A pinch of Coriander root, chopped

Preparation

Deep Fried Crispy Scallop with Golden Superior Sauce
- Prawn paste: Mix the prawn paste with all the ingredients and set aside.
- Steam salted egg yolk and cut into cubes and paste the seaweed on top.
- Cut the scallops into 2 pieces and put the salted egg yolk in between. Spread the prawn paste then coat with the breadcrumbs and black sesame.
- Heat the oil and fry the prawn paste till golden brown.
- Cook the condiments in boiling water then fry in pan till fragrant and set on plate.
- Sauces: Cook the ingredients and seasoning till thickened. Ready to serve.
